About Us.
Netherton Foundry is a family owned business located in South Shropshire. We sit right in the birthplace of the Industrial Revolution. This was the 18th Century’s “Silicon Valley”. Today the heavy iron and coal industries are all but a distant memory and, for the most part, this corner of rural England has returned to a much quieter way of life. At Netherton Foundry, we have been inspired by the 18th and 19th centuries’ Shropshire Iron masters, especially Abraham Darby, creator of the original iron bridge. We wish to look again at the values that inspired this amazing period of creativity and energy. Over the years we have become more and more interested in the provenance of the materials we use. Our objective is to build quality products made from materials principally sourced in Shropshire and its neighbouring counties. In our own small way, we are committed to reducing our impact on this fragile planet by uilding products that will last, from materials we trust.

Why our spun black iron & cast iron cookware is special.
Serious cooks love the way that black iron pans heat evenly & give great cooking performance. They are perfect for range stoves, open fires, wood burning stoves, electric, gas, ceramic, halogen & induction hobs (heat up slowly to keep flat). Our spun iron pans are about half the weight of cast iron simply because we can spin the black iron much thinner than we cast it, yet still retain the great thermal properties of iron. To judge the size you need, we measure our pans across the top rim of the pan to describe the size. Each pan is hand-made by craftspeople in our own workshops in England, and if your pan has oak handles, the grain on every piece is unique and each one is branded by hand. Our pans are like fingerprints, no two are identical. Your pan will develop with use and, if cared for, will age beautifully and be a friend for life.

What is seasoning?
Seasoning is the black/brown coating on the surface of iron pans. Seasoning stops corrosion, food tainting & makes the pan easier to clean. We do not use chemical coatings such as PTFE & PFOA’s. Therefore our pans do not have the potential health dangers from toxic fumes associated with high temperature cooking seen on many chemically coated cookware items. All our cookware is pre-seasoned at a high temperature with natural organic flax oil, which creates a durable, non-greasy Easy Clean Coating. If the coating becomes worn or damaged, you just need to re-season the pan.

Which oils to use for seasoning.
We recommend flax oil (edible linseed), this is the best we have tested. Canola / rapeseed, peanut & coconut oil are used by others. Don’t use olive, sesame, generic vegetable or nut oils. Don’t coat cast, black or spun iron in oil straight from the bottle or can, this just softens the coating, the oil needs to be seasoned to be an effective layer.

First Use.
You don’t have to season before use, just wash in hot water. Don’t use soap or detergent, immediately dry on a low heat.
However, for very best results, give the iron cookware an extra seasoned coating before first use. The small specks of black on the pan surface are traces of cotton fibre that has been baked on during seasoning process, this is normal. They can be rubbed off with a washing up sponge.

Handy Tips.
If you are cooking meat or fish – oil the food, not the pan. Be patient; allow the food to cook before trying to turn it over. Don’t fry food straight from the fridge, allow it to come up to room temperature. Remove food from iron cookware immediately after cooking & before food cools. Cold damp food will encourage rust & you will need to re-season more often.
Do not store food in iron cookware in refrigerators or freezers. Take care when cooking acidic foods, eg. tomatoes, citrus juices, vinegar or wine, we suggest that you re-season before using these.

Using pre-seasoned iron cookware.
The more you use your pan the better it gets as the seasoned patina develops. Your Netherton cookware is handmade, so each one is unique. They will not all be as flat as a billiard table. To maintain pan flatness follow these steps:
Every time you use the pan heat SLOWLY from a LOW setting, before selecting high or full power. Use a hob/ring the same size as the pan base, small hobs/rings will warp big pans.

Cleaning pre-seasoned iron cookware.
Never clean the iron cookware in a dish washer. Don’t place, iron cookware into cold water, this might cause it to crack or warp.
After use, clean the cookware with a stiff plastic brush and hot water. We suggest that you do not use soap, and definitely do not use detergents. If you find that some food has stuck, place in boiling water or boil water in it to soften stuck food. Immediately dry after washing by placing on a low heat. Never allow the bowl, lid or pan to stand and air-dry as this will encourage rusting.

Preparation for Re-seasoning.

Remove rust spots with fine sandpaper or steel wool. Wash in hot soapy water, scrub with a scouring pad or stiff brush. REMEMBER to unscrew & remove any wooden knobs or handles before placing in the oven.

Re-seasoning at home.
Follow this method for all cookware except woks with wood handles & cooking irons. Watch YouTube Video: Re-seasoning Netherton Foundry cast iron cookware with flax oil. Cover all surfaces of iron with a very thin coating of flax oil using a cotton cloth. A thin coating gives the best results, wipe again with a cotton cloth after coating. Leave no runs or pools of oil, just leave an oily layer on the surface of the metal. Place on a rack in oven. Slowly heat the oven to MAX (approximately 250ºC/400ºF or Gas Mark 9/10). Once the oven is up to temperature, maintain the temperature for 40 to 60 mins. Switch off the oven, allow to cool slowly.
